filled with ground beef, salsa, black beans, and taco seasoning, it is a hearty and warming soup that can be made in the slow cooker or on the stove. i had every intention of my next post being a review of an eggplant parmesan recipe i used to love to make, and has quite an interesting story about it. i was miserable. she was the runt of a litter from a stray, born under his front porch, and he had to bottle fed her. after all of this i wanted to make something i love for dinner tonight, something warm and comforting. on to tonight’s dinner. until maybe a year ago i don’t think i had even heard of taco soup. there are so many different ways you can make them, from regular ground beef, to chicken ( i make a really good crock pot salsa chicken for this, but the recipe is unfortunately not my idea. ), to fish, veggie, breakfast….i could go on forever! okay, to be honest it’s not a brand new world, i’ve made it at least 5 times since i discovered it, usually in the slow cooker. i haven’t searched for every recipe ever for taco soup, but i have to say the version i make is a bit different from any i’ve seen so far. you can top this soup with your favorite taco toppings and serve it with tortilla chips or eat it plain.

a bowl of this soup is sure to beat the nippy cold winter weather, and the best part is it cooks in less than 10 minutes and takes just 5 ingredients! turn on a multi-functional pressure cooker (such as instant pot®) and select saute function. add salsa and frozen vegetables. close and lock the lid. release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. i used a seasoned corn and bean mixture with tomatoes, peppers, onions, and authentic mexican seasoning from the frozen section for this recipe. it is a very good base, though, and could be elevated to such great heights.
i added a whole diced purple onion, 3 cloves of garlic, 3 tablespoons of chopped pickled jalapenos, and i seasoned my ground meat with homemade taco seasoning. i added the salsa as instructed, 1 can of tomato sauce, and somewhere between 1/2 and 3/4 of a box of chicken broth (i eyeballed it until i hit the amount of liquid i wanted, knowing i was going to let it simmer for about 40 minutes, and so some reduction would happen.) topped with sharp cheddar, crema, and more pickled jalapenos to taste. it was awesome. it is a very good base, though, and could be elevated to such great heights. also, as written, i found this to not be near enough liquid to be considered a soup. i added the salsa as instructed, 1 can of tomato sauce, and somewhere between 1/2 and 3/4 of a box of chicken broth (i eyeballed it until i hit the amount of liquid i wanted, knowing i was going to let it simmer for about 40 minutes, and so some reduction would happen.) it was awesome.
