hopefully i make up for that long wait by posting what i think is the best version of it. i just made this for dinner and it definitely is the best baked ziti i’ve ever had. i made this recipe as a last-minute dinner, and my family loved it! to me, the next-day leftovers are are even better, but sometimes can be a little dry so i love the amount of sauce with this recipe! so i made it for him from this recipe and oh my did i receive a big kiss on the mouth for doing so!!! the only other change i made was to cut this recipe in half and it was plenty even for 4 people. sauce and a can of fire roasted tomatoes because i like the chunks. and i really piled on the mozzarella. how many days in advance can i make it without freezing it i make a lot of italian dishes, and the simplicity of this recipe surprised me.

i do make a couple of changes to this recipe, i add about 1/2 cup of asiago and mix it with the pecorino and i add about 1/2 cup red wine to deglaze the sausage and onions. i think it’s because of the ricotta and mozzarella which i think aren’t enough. the second and subsequent times i added a bit more pecorino. of course you can cut the recipe down to a more manageable size, but i do the full service for ten. but i wanted to see if i was nailing it according to the expert. i used turkey hot and traditional sausage instead of pork. i wouldn’t change a thing when making it again, the flavors were all spot on – love the mix of sweet and spicy sausage. when it goes on sale at costco i drop in and buy a few jars for the pantry, two jars for a little over $8. we made it mostly with ground turkey and a bit of sausage, as i need more healthy. made it for christmas day dinner and it was a huge success!
