this eggy, hearty challah bread is easy to make and sure to be a hit! it took me a few tries and several batches of challah before i got it to look somewhat right. they make it with challah bread and a super secret custard-y egg batter recipe that i have been determined to recreate for years. and now that i have fresh challah on my counter, i’m pretty sure it’s about to be french-toast-o’clock in my apartment (friends and/or french-toast-testing-guinea-pigs welcome). *note: i make challah in my stand mixer, a kitchenaid professional 600 series 6-quart-er, but even my supercharged motor slows down and pulls a bit with the amount of dough this recipe produces. i’m not sure how this is going to come out because i’m in the middle of it – the recipe says it takes 20 minutes! i make challah bread each week for friday sabbath dinner and this recipe is one of the few i have found that produced gorgeous pillowy soft golden challah bread.
since them, i have made it a few times with modifications and it is the bomb. i make a lot of challah but this recipe looks like what i have been missing! i wud like to put them in the fridge overnight and bake tmrw fresh for the holiday. i read the measurements wrong. by placing it on a flour-dusted baking sheet and sliding that into the freezer for an hour or two, then transferring the loaf to cling wrap or an airtight container and returning it to the freezer. i also like to slice the bread and freeze individual slices – just pop a slice in the toaster straight from the freezer whenever you want a piece. i searched for a recipe that looked good and i loved yours plus your easy to follow 6 braid youtube video.
punch down the dough, and cut it into 3 equal-sized pieces. this bread was beautiful and yummy, but was a bit drier than i prefer. the dough was smooth and elastic, and on the stickier side (i didn’t want it to be dry). i used my bread machine on dough setting and made it exactly according to directions. as to the “killing the yeast” comment in my opinion your yeast may be old…this is a standard temp for water to bloom the yeast in. i used this as the base for a bread pudding and it was awesome in that. i made french toast with it the next day and if you don’t add raisins it makes great grilled cheese…. definitely a nice recipe to follow for a first time challah maker.
the only change i made was to proof the loaves before baking so i don’t know how it comes out without this step. i used to quick rise yeast, but let it rise second time after the braid. i recommend this to anyone..it never fails me 🙂 i brush butter on top before putting it in the oven turns out nice. however, it was really easy and fun to make! i’d prefer to give this a four and a half, because it was very good, and very easy,. i have since realized that a challah recipe that includes only a few tablespoons of honey – with no added sugar – is, of course, not going to be good. i added 2t of white sugar to the dough and added 1 tsp of vanilla to the egg wash. it is fantastic tasting. i am used to challah having oil in the recipe and letting it rise a second time.
