easy chicken chow mein recipe

this one pot chicken chow mein is a fast and healthy dinner the whole family will love! (note: to see the recipe card with amounts and nutrition info, scroll to the bottom of this post!) i also like to do things my way, which means improvising and breaking the rules when necessary. followed the recipe as stated, but omitted chicken (vegeterian option), it tasted bitter to me, and felt like it needed something – i can’t quite get my finger on it. i made it for my son and myself….husband is doing low carb and won’t eat pasta…..i’m making him a keto recipe for his dinner.

i’m trying this partly because i too had my 3rd baby in nov, have a crazy 2 year old and my big girl is off to kindy in sept! and i had to comment because we just bought a new pan and my hubby grabbed the rock and is so in love. i didn’t had the sauce neither and i made my own and it was very good. i remade it with more authentic chow mein flavors and i actually like the new version better! i made this recipe last night & am sad to say ($10+ of ingredients later) that it ended up in the trash! i also like to do things my way, which means improvising and breaking the rules when necessary.

the thing i hate about ordering takeout from a restaurant is that it always takes forever for the food to arrive. by the time the food gets to me, i will have eaten a mini-meal just to stave off my hunger. i usually keep noodles around the house, like chow mein, so i that i can whip up a meal quickly. making chow mein at home is very simple, and you can actually cook it without a recipe. although the noodles look more authentic, the manufacturers added yellow food coloring to get that hue. i made my vegetable chow mein with those noodles. through my recipes and cooking videos, i hope to honor the food and traditions that surrounded my chinese american upbringing. this looks so up our alley, and the whole 30 minutes thing is a deal breaker, so yeah. i think i need more chow mein in my life. love this beautiful dish can never go wrong with a 30 minute meal and noodles.
