i omitted the jalapenos, and bumped up the cayenne a bit since i like my pimento cheese with a bit of a bite to it. first time trying this and i liked the concept. i had been looking for a recipe to duplicate it and this is very close. jalapeno is optional although it is good to make a double batch of this and add jalapeno to the second batch. i put it in the fridge over night, dumped it on a cheese platter, and served with triscuits. this is the only way i will make pimento cheese in the future. so easy–i didn’t bother using the mixer, it was just as easy to mix it up with a spoon and a bowl. i served with crackers and am looking forward to trying it in a grilled cheese sandwich 🙂 will definitely make again! i can’t wait to see how good it is after it is in the fridge for a couple of hours. i thought my homemade pimento cheese was the best but i made this tonight and you win hands down. this is the best pimento cheese recipe ever! this will be the only pimento cheese recipe i will use for the rest of my life. this did not taste like the traditional pimento cheese so i was somewhat disappointed.
i took this to a party and my friend said it was just like her mississippi mom made. my only tweak to this recipe was that i added bacon. my husband asked for pimento cheese and since it is so expensive to buy pre-made i decided to find a recipe for it. i love spicy pimento cheese spread and this recipe is a keeper. i used the cayenne pepper and a jalapeno and it wasn’t hot at all. i added more cheese, doubled the pimento and added a touch of sugar and it was salvageable. i only had 1/2 the cream cheese so i made up the difference with greek yogurt. i have had better pimento cheese and will keep searching for the perfect one. i made this for the second time tonight. i loved this recipe and so did my guests! yes i tweaked this recipe a bit, but i almost ate the whole bowl so it worked. this was the first recipe i came across and i tried it. the boys and i like it both ways; so either way is fine for us:-).

once i shred my cheese, i then mix in my softened cream cheese until well combined. once i have my cheeses well combined, i then stir in the remaining ingredients: pimentos, salt and pepper, and any mayonnaise or greek yogurt that i may be using. you can also include other spices and seasonings if you prefer. i think i’ve tasted and love them all! pimento cheese is delicious served with bagel chips, pretzels, or crackers and i especially love it spread on a sandwich or wrap or served with veggies. whether you serve as a dip or as a pimento cheese sandwich with a side of chips and a pickle, you just can’t go wrong!
