easy tortellini soup

this soup is so, so good – i want it any time it’s rainy and chilly, which is pretty often in portland, or!!!! this recipe is lovely as is and i definitely don’t need to follow the instructions anymore. i found this recipe a few months back and since then have made it almost every week! i wanted to try something new and have been wanting to do a tortellini soup and this recipe hit the spot! i used spicy italian sausage, double the amount of tortellinis, and a little extra stock to compensate for the extra tortellinis. wow this soup is amazing i have made it twice in two weeks because everyone loved it. so i bought it, and i made mine with spinach, spicy sausage, corn, canned diced tomatoes, a shredded turkey leg, and i did add the flour but i didn’t have the cream so it was more brothy, but oh so delicious! i have made this on a few occasions and i love it. i substituted the sausage with chicken sausage and omg so yummy! my friend had knee surgery and i have been cooking for her family and my husband and i and this soup is a 10z  this is so damn delicious! i made it as is except i maybe didn’t use all the sausage and it was spectacular. i only swapped out kale for spinach and followed the rest and it is so delicious. i put a bit of a twist on this – i set out to make the exact recipe, but with a vegetarian daughter, i had to sub the chk broth for veg broth, and i used a homemade ital sausage made with impossible meat. it made enough for each of us to have one hearty bowl for dinner and each of us one bowl for lunch the next day! made this yesterday for my boyfriend and i – we needed some comfort food & man did it hit the spot. i made this once before, and it was a bit too rich for me. made it this weekend and it was absolutely delish! i replaced the kale with spinach and it was great! i made this soup last week, and it is off the charts delicious! i will make this soup again and often since it was so delicious! this was so easy to make and delicious. i just gave up and stirred it all together with a spoon. this soup recipe was the latest i tried. did not have kale so  i used 4 ounces of spinach and it was just right. i make it exactly as written most often but i have used spinach instead of kale a few times and it is just as good. my husband asked me to add this to our rotation and i am happy to oblige because it was so easy to make! might be the best soup i have ever made, and i am a soup kind of guy. tonight i made it with some turkey stock i made from the thanksgiving turkey and it is amazing. this came together so easily and i love that it was a smaller batch recipe for two people.

i tried this for the first time and my husband declared it my best soup to date! i make it without meat and add extra heavy cream. my husband was so impressed when i made this last night for the family. my husband “doesn’t like soup” so i doubled the tortellini and then added a cornstarch slurry at the end. the kids and i really liked it. super flexible recipe and i assume ill be making it all the time now as my boyfriend cant get enough lol omg this was so amazing!! i have made this soup many times and it is one of my favorite soups ever. my boyfriend loves when i make this and it is one of his favorites. i used hot italian sausage and it really added a nice kick. just made this and i will definitely be making again and doubling the recipe. my sons told me this is a keeper, and i totally agree. all of the positive reviews caught my eye so i just have to add – it was absolutely delicious and will be come a regular in our weeknight rotation. i served it with beer bread and butter it is was a fantastic meal. it was super easy to make, flavorful and the perfect thing to enjoy on a cold winter night! hi chungah, i made this recipe for my grandfather, he’s 93! this was so easy and so delicious! i made this soup (subbed spinach for kale) and this was so good. i substituted turkey sausage and used the whole can of tomato sauce the 2nd time i made it and loved it felt like it was more creamy. i substituted the kale for spinach and added some freshly grated parmesan cheese to it. three of us are vegetarians so i omitted the sausage altogether and it was absolutely divine. used spinach instead of kale with my recipe and omg best i have ever had !!!! my bf and i agreed it was even better the next day for lunch. i came across this recipe and it was the perfect choice! i made this recipe for my entire family and they gobbled it up. i have had several requests for it and i made a batch for us, too. husband and i have made this 3x in the last month. wondering if i can make this as the recipe calls and then add to my crockpot? as soon as i saw this recipe i got the ingredients to make it for lunch! made this for my husband tonight and it was amazing! it is outstanding, and to make it a bit less fattening i use half n half, and a bit of parmesan cheese!
