this soup is so, so good – i want it any time it’s rainy and chilly, which is pretty often in portland, or!!!! this recipe is lovely as is and i definitely don’t need to follow the instructions anymore. i found this recipe a few months back and since then have made it almost every week! i wanted to try something new and have been wanting to do a tortellini soup and this recipe hit the spot! i used spicy italian sausage, double the amount of tortellinis, and a little extra stock to compensate for the extra tortellinis. wow this soup is amazing i have made it twice in two weeks because everyone loved it. so i bought it, and i made mine with spinach, spicy sausage, corn, canned diced tomatoes, a shredded turkey leg, and i did add the flour but i didn’t have the cream so it was more brothy, but oh so delicious! i have made this on a few occasions and i love it. i substituted the sausage with chicken sausage and omg so yummy! my friend had knee surgery and i have been cooking for her family and my husband and i and this soup is a 10z this is so damn delicious! i made it as is except i maybe didn’t use all the sausage and it was spectacular. i only swapped out kale for spinach and followed the rest and it is so delicious. i put a bit of a twist on this – i set out to make the exact recipe, but with a vegetarian daughter, i had to sub the chk broth for veg broth, and i used a homemade ital sausage made with impossible meat. it made enough for each of us to have one hearty bowl for dinner and each of us one bowl for lunch the next day! made this yesterday for my boyfriend and i – we needed some comfort food & man did it hit the spot. i made this once before, and it was a bit too rich for me. made it this weekend and it was absolutely delish! i replaced the kale with spinach and it was great! i made this soup last week, and it is off the charts delicious! i will make this soup again and often since it was so delicious! this was so easy to make and delicious. i just gave up and stirred it all together with a spoon. this soup recipe was the latest i tried. did not have kale so i used 4 ounces of spinach and it was just right. i make it exactly as written most often but i have used spinach instead of kale a few times and it is just as good. my husband asked me to add this to our rotation and i am happy to oblige because it was so easy to make! might be the best soup i have ever made, and i am a soup kind of guy. tonight i made it with some turkey stock i made from the thanksgiving turkey and it is amazing. this came together so easily and i love that it was a smaller batch recipe for two people.
