i’m anjali. ); with a passion for delicious food and a desire to make healthy eating easy, tasty and fun! but it can also be the biggest struggle of the day for those of us with kids! you coax your kids out of bed, try to get them ready as fast as possible, and then find yourself urging them to eat faster so that they won’t be late for school. which is why i came up with a few tried-and-true, picky-eater-proof breakfast (or brunch) recipes that are guaranteed to motivate your kids to get going in the mornings ???? recipe #1: toast. i like to make “toast” a little bit heartier by using a few healthy swaps: avocado toast: (with salt, pepper and scrambled eggs; with salt/pepper and fresh greens, or with sliced strawberries and seeds on top!) these fun toasts were inspired by a meal i had in new york a couple years ago, at high street on hudson – a restaurant i found on this list of top brunch spots! i think i had 4 different toasts there – all super inventive and flavorful, that i decided to recreate it at home. this one is great because you can make it the night before, pre-portion it for the morning, and all you have to do is warm it in the microwave before serving. it’ll last in the fridge for 4-5 days (enough for healthy breakfasts every day of the week!)
whisk eggs, mash the banana well and then combine. take silver-dollar sized portions of the batter and add to the pan. i haven’t met anyone who doesn’t like pancakes, and these are both nutritious and delicious for the whole family! the oatmeal pictured below was made with 1/2 cup rolled oats cooked with water, topped with granola, nuts, peaches and greek yogurt! recipe #5: grab-and-go breakfast muffins. they’re perfect to take in the car for a filling and satisfying on-the-go breakfast. i recently introduced my kids to another version of fancy toast: a slice of sourdough bread spread with ricotta cheese and a drizzle of honey with raspberries on top. but when i had younger tots, i went with simpler fixes because i often had zero energy for being creative with food. and i just wanted to give them something that would be healthy-ish, fast and that they were guaranteed to like. ricotta and honey is the best ???? i just made paninis with ricotta cheese, tahini, pear, walnuts and a drizzle of honey on top and my kids loved them too! half the time i end up just making a 20 min soup in the instant pot because i can’t think of anything else to make for dinner haha!
eggs are commonly not a favorite food among picky eaters. not every child needs to like every food. but that doesn’t need to stand in the way of having a nutritious breakfast. if they dislike creamy smooth foods a smoothie will probably not be their favorite. if all else fails, go for leftovers or serve one of their favorite foods, even if it’s a little untraditional! don’t assume that they dislike a new breakfast food if they don’t eat it the first time or even ten times that you serve it. aim to top a favorite type of bread with an accepted protein source. if your child is not a fan of eggs, yogurt, pancakes, or oatmeal, don’t worry! most of the kids i know will eat these from a box (frozen or a premade mix), but dislike homemade.
if your child is amenable to change, look for options that are higher in protein and fiber and lower in sugar. if your child will eat homemade, make small swaps like adding in some ground flaxseed or subbing whole wheat flour for a portion of regular. you can also add in powdered milk to help keep them full. if your child doesn’t like chunks of fruit in their baked goods, try pureed. cook oats with milk for added protein and add in any of the below for an extra flavor boost that kids with a sweet tooth with love. add in just salt or build with salt, pepper, olive oil and even some grated parmesan cheese. alternate granola, fruit, jam, and yogurt to make a nutritious meal with staying power. if the yogurt texture is not your child’s favorite, add more granola or crisp fruit to offset the creaminess. when seeking nutritious breakfast foods for your picky eater, keep their preferences in mind. consider the flavors, textures, and looks that they most enjoy and try to carry those over to new foods.
