during the mughal period, this mixture was flavoured with pistachios and saffron, packed into metal cones and immersed in slurry ice, resulting in the invention of kulfi.  however, australian food historian charmaine o’brien writes, “…it is likely that (kulfi) originally evolved in the cooler climates of persia or samarkand and that the mughals appropriated the concept and elaborated on it to create the creamy, perfumed dessert that it now is. the milk is stirred almost continuously to prevent it from sticking to the cooking utensil.  the slow cooking caramelises the sugar in the mixture and browns its milk proteins, giving kulfi its distinctive taste. the sealed moulds are submerged in an insulated matka filled with ice and salt. kulfi prepared in this traditional way is called matka kulfi. the kulfi is then removed from the moulds and garnished with ground cardamom, saffron, or pistachios.

you want to keep as much air in the ice cream as possible. to serve, gently turn the ice cream pops out of the cups or use kitchen shears to carefully snip and pull off the paper. i have not tried to prepare vegan kulfi, but i’m sure it could be done. it won’t have the same ultra-rich and creamy texture, but you can try our dairy-free coconut milk ice cream as a base. oh my-pistachio ice cream was a favorite as a child but diet has changed much since then. you really need the fat in the cream to create the right texture here.
