it’s important to follow instructions and watch the baking time, otherwise they turn out crunchy instead of chewy. is it impossible to decrease the vegan butter to 1/4 cup and sugar to 3/4 cup? i’m not sure about the butter and sugar, it might be okay but it will change them somewhat. i have made 3 batches and have to hide them after i make them otherwise they are gone in a day. starting with the 2nd batch, i added about a tablespoon of miso paste to the melted butter and it adds a funky umami kick that works well. those might work, but i haven’t tried it. made these for the second time tonight and i added 1/2 tsp of peppermint extract at the same time as the vanilla, and they turned out amazing! i cut down sugar and vegan butter quite a bit and left out chocolate chips, and they were quite delicious. also for my high elevation (7,000′), i added a little more soy milk & just slightly less baking soda. i guess you might say it isn’t the same recipe, but i was quite glad to have it, and with a couple of tries, to work out a good variation. my recipes are approachable, full of flavor and made with everyday ingredients.
